Katy's Caramel Corn
12 Cups of Popped corn
2 cups unsalted peanuts
1 cup Brown Sugar
1/2 Cup White Corn Syrup
1/2 Cup Butter or Margarine
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
Pop the popcorn and put into a large cake pan. Place pan in a 250 degree oven while making caramel sauce.
Combine butter, brown sugar, corn syrup, and salt in heavy 2 quart saucepan. Stir until mixture boils. Do not stir once it boils. Boil on medium for 5 minutes. Remove from heat and add soda and vanilla. Stir quickly until mixture changes color and gets fluffy.
*Pour mixture over warm popped corn and nuts. Gently stir. Bake in a 250 degree oven for 1 hour, stirring occasionally. Take out of oven and turn out onto waxed paper to cool breaking apart any big pieces.
*For better coverage, I pour my popcorn and nuts into a really large bowl before pouring on the caramel sauce and then transfer it back into the pan before baking*

Well, Cindi....I feel like a complete and utter DUFUS!! You have been following me and leaving such sweet comments, and I THOUGHT I was following you, but wondering why you never posted. Ummmm DUH.... Guess the "follow" didn't take the first time - or I messed up. (You know, I've been known to do that...) Anyways - I'm here now....and oh....this looks so good. I never used to like carmel corn...but lately, my tastes have completely changed. (NO, I'm NOT pregnant!!) I'll have sweet dreams tonight.... Smiles & Hugs ~ Robin
